Recipe: Sweet and Sour Cucumber

Try this palate pleasing accompaniment to your cold meat meal


  • 1.5lbs (675g) cucumber
  • 6 oz. (175g) granulated sugar
  • 12 fl. oz. (450ml) malt vinegar
  • 1 tbsp. whole pickling spice
  • Cooking Instructions:

    1. Pour the vinegar into a pan and add the pickling spice
    2. Bring to the boil then transfer to a heatproof glass basin and leave to cool for about an hour
    3. Peel the cucumber ,cut into half inch slices then quarter the slices
    4. Pour the vinegar through a strainer, to remove spices, back into a pan
    5. Add the sugar to the pan over heat and stir until the sugar dissolves
    6. Add the cucumber pieces to the pan, bring to the boil, then simmer for about 10 minutes or until the cucumber becomes almost transparent
    7. Remove pan from heat and transfer the cucumber pieces into warmed jars with a perforated spoon
    8. Carefully pour enough of the vinegar into each jar to cover the cucumber pieces
    9. Allow to cool the seal with a vinegar proof cover
