Smoked Kipper Pasta
Serves 6
Description/Notes:
Bring a truly Mediterranean flavor to your table with this tasty pasta dish
Ingredients:
1 lb. (450g) smoked kipper fillets, boned 4 oz. (125g) button mushrooms, sliced 1 onion, finely chopped 1 clove garlic, crushed 8 oz. (225g) low fat cream cheese quarter pint (140ml) Greek yogurt 1 tablespoon fresh parsley, finely chopped 1 teaspoon fresh coriander, finely chopped 1 teaspoon of olive oil 12 0z. (350g) pasta twirls
Cooking Instructions:
- Heat the oil in a frying pan then add the garlic and onion
- Cook for about 5 minutes or until soft
- Gently stir in the kipper, mushrooms and herbs
- Simmer for a further 3 minutes
- Put the cream cheese and yogurt in a small pan then stir over a low heat until runny
- Season well then stir in the fish mixture
- Bring a pan of slightly salted water to the boil, add pasta and cook for about 15 minutes, or until soft
- Drain the pasta and pour into a serving dish
- Gently heat the fish mixture and pour over the pasta, then serve immediately
