Recipe: Smoked Kipper Pasta

Bring a truly Mediterranean flavor to your table with this tasty pasta dish

Ingredients:

  • 1 lb. (450g) smoked kipper fillets, boned
  • 4 oz. (125g) button mushrooms, sliced
  • 1 onion, finely chopped
  • 1 clove garlic, crushed
  • 8 oz. (225g) low fat cream cheese
  • quarter pint (140ml) Greek yogurt
  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon fresh coriander, finely chopped
  • 1 teaspoon of olive oil
  • 12 0z. (350g) pasta twirls
  • Cooking Instructions:

    1. Heat the oil in a frying pan then add the garlic and onion
    2. Cook for about 5 minutes or until soft
    3. Gently stir in the kipper, mushrooms and herbs
    4. Simmer for a further 3 minutes
    5. Put the cream cheese and yogurt in a small pan then stir over a low heat until runny
    6. Season well then stir in the fish mixture
    7. Bring a pan of slightly salted water to the boil, add pasta and cook for about 15 minutes, or until soft
    8. Drain the pasta and pour into a serving dish
    9. Gently heat the fish mixture and pour over the pasta, then serve immediately
