Chicken Curry
Serves 1
Description/Notes:
This spicy supper proves that cooking for one can be fun.
Ingredients:
8 oz. boneless chicken breast, skinned 4 oz. (100g) cooking apple, chopped 4 0z. (100g) cauliflower, chopped 2 oz. (5og) onion (chopped) one third of a pint (200m) chicken stock 1 tsp. tomato puree 1 tsp. Lemon juice curry powder to taste
Cooking Instructions:
- Place the vegetables, apple, curry powder, lemon juice and tomato puree in a thick bottomed pan
- Simmer for about 10 minutes before adding the chicken breast
- Continue simmering for 30-40 minutes or until chicken breast is tender
- Serve on a bed of brown rice
