Recipe: Chicken Curry

This spicy supper proves that cooking for one can be fun.


  • 8 oz. boneless chicken breast, skinned
  • 4 oz. (100g) cooking apple, chopped
  • 4 0z. (100g) cauliflower, chopped
  • 2 oz. (5og) onion (chopped)
  • one third of a pint (200m) chicken stock
  • 1 tsp. tomato puree
  • 1 tsp. Lemon juice
  • curry powder to taste
  • Cooking Instructions:

    1. Place the vegetables, apple, curry powder, lemon juice and tomato puree in a thick bottomed pan
    2. Simmer for about 10 minutes before adding the chicken breast
    3. Continue simmering for 30-40 minutes or until chicken breast is tender
    4. Serve on a bed of brown rice
