Sweet and sour pork

Description/Notes:
Have a no-fuss Oriental meal without the hassle of leaving your home
Ingredients:
4 oz. (100g) pork fillet half an onion, thickly sliced 1 ring pineapple, drained from a tin of pineapple in natural juices half a green pepper, deseeded and thickly sliced 1 tbsp. tomato ketchup 1 tbsp. pineapple juice 1 tbsp. Soy sauce 1-2 tsp. cider vinegar quarter tsp. Cornflour
Cooking Instructions:
- Trim the fat off the meat and cut the pork into bite sized pieces
- Dry-fry the pork, pepper and onion for 5-6 minutes then add the pineapple and warm through
- Whisk together all the other ingredients and add to the pan
- Bring to the boil and simmer for 3-4 minutes
- Serve with a baked potato or brown rice
