Fisherman's Roll
Description/Notes:
An ideal companion for anglers, this tasty roll will guarantee that they have experience some kind of nibble by the river
Ingredients:
1 medium can of tuna, finely flaked 4 0z. (125g) mushrooms, chopped 2 teaspoons of lemon juice half a small onion, peeled and chopped 1 oz. (25g) butter 1 teaspoon of chopped capers salt and pepper 1 egg, beaten 8 oz. (225g) flaky pastry
Cooking Instructions:
- Pre-heat oven to 450F, Gas Mark 7
- Roll out the pastry into a thin oblong and place on a baking sheet
- Fry the onion in butter until it softens then add the mushrooms and cook for a further few minutes
- Add the tuna, egg, lemon juice and capers: season to taste
- Put the mixture on the center of the pastry , damp edges, and fold over, first the top and bottom and then the sides. Press edges well together
- Score a couple of times across the top, brush with milk and place in the pre-heated oven for 15 minutes
- Reduce the oven temperature to 400F, Gas Mark 5 and cook for a further 15 minutes
