Recipe: Cheese and Tomato Pie

Wonderful treat for the vegetarians on your picnic outing


  • 2 Spanish onions, peeled and sliced
  • 4 large tomatoes, peeled and sliced
  • 3 oz. (75g) grated cheese
  • 8 oz. (225g) short crust pastry
  • salt and pepper
  • beaten egg to glaze
  • Cooking Instructions:

    1. Pre-heat oven to 400F, Gas Mark 6, 200C
    2. Line an 8 inch (22 cm.) pie plate with rather more than half the short crust pastry, leaving the rest for the lid
    3. Place the onions in boiling, salted water and cook until tender then drain well
    4. Fill the pastry case with layers of onion rings, tomato slices and cheese, seasoning lightly between the layers
    5. Damp the pastry edges and cover with the lid
    6. Press the edges of the pastry well together and flute with the finger and thumb
    7. Glaze with the beaten egg and place in the pre-heated oven for 40-45 minutes
