Recipe: Gazpacho chilled soup

A wonderfully light and refreshing chilled soup to start of that special occasion.


  • I lb. (450g) tomatoes, washed and roughly sliced
  • 1 small onion, skinned and sliced
  • 1 small green pepper, sliced and with seeds and membrane removed
  • 1 clove of garlic, skinned ad crushed
  • 1 tbsp. olive oil
  • 1 tbsp. wine vinegar
  • 2 tbsps. lemon juice
  • salt and pepper
  • quarter of a cucumber, peeled and diced
  • toasted wholemeal croutons
  • Cooking Instructions:

    1. Place the tomatoes, pepper, garlic, onion, vinegar and olive oil in an electric blender and combine well together
    2. Turn the mixture into a basin and add the lemon juice and season to taste
    3. Chill in a refrigerator before serving with toasted wholemeal croutons
