Recipe: Selsig Morgannwg (Glamorgan Sausages)

A cheesy, meat-free sausage ideal for vegetarians. Serve with mashed potato or chips and peas.


  • 3oz grated cheese
  • 5oz fresh breadcrumbs
  • 1 small onion
  • 1 egg
  • a pinch of mixed herbs
  • a pinch of mustard
  • 1 oz flour
  • salt and pepper
  • 2 oz fat
  • 1 oz crisp breadcrumbs
  • Cooking Instructions:

    1. Finely chop the peeled onion
    2. Separate the egg yolk from the white
    3. Mix the onion, cheese, breadcrumbs and seasoning and bind together with the egg yolk
    4. Make into sausage shapes and roll in flour
    5. Beat the egg white until frothy
    6. Dip the sausages in the egg white and roll in the crisp breadcrumbs
    7. Fry in hot fat
    8. Serve with mashed potatoes or chips
