Recipe: Spiced Chicken

If you enjoy the flavour of spices then this is just for you


  • 3 lb. (1.5kg) chicken, uncooked, skinned and cut into 12 joints
  • 3 oz. (75g) butter
  • 1-2 teaspoons powdered turmeric
  • 6 cloves
  • 1 X 1 inch (2,5cm) stick cinnamon
  • 2 cloves garlic, chopped
  • 3 large onions, peeled and chopped
  • salt
  • 1 teaspoon ground ginger
  • Cooking Instructions:

    1. Heat the butter in a pan and add the turmeric to it
    2. put the chicken joints in the pan then raise the heat and fry the joints for 7-8 minutes
    3. Add the ginger, cloves and splintered cinnamon
    4. Stir, then add the onions and garlic, sprinkle with salt and put lid on pan
    5. Raise the heat to high for 10 seconds then lower to medium
    6. Shake the pan, return to the heat and cook without uncovering, but shaking the pan from time to time, for 25-30 minutes
    7. Uncover, leave for one minute then serve with rice or noodles
