Recipe: Swiss Omelet

Tasty omelet, delicious with a side salad


  • 4 eggs
  • 2 oz. (50g) mushrooms, sliced
  • 2 tomatoes, peeled and sliced
  • 1 cooked potato, diced
  • 2 tablespoons cooked, green peas
  • salt and pepper
  • paprika
  • 1 oz. (25g) butter
  • 1 small onion, finely chopped
  • Cooking Instructions:

    1. Melt the butter in a good sized frying pan
    2. Add the onion and cook until soft, then add potato, tomatoes, peas and mushrooms and sauté all well together
    3. Beat the eggs, add a little seasoning and pour over the contents of the pan
    4. cook until the egg has just set then turn upside down on a hot dish
    5. Sprinkle with paprika and serve with a side salad
