A little coleslaw and side-salad will enhance this satisfying pasta dish.
- Cook the pasta in a pan of slightly salted water until it is cooked but still firm
- ‘Dry fry’ the mushrooms in a non-stick pan until they are soft
- Add the pasta and yoghurt to the mushrooms, mix well and stir in the parsley
- Transfer to a warmed plate and sprinkle with the grated Parmesan cheese
